Shepherds Pie


1 tsp Olive Oil

3 lbs potato or yam

1lb Minced Chicken or Beef

¼ cup milk

1/8   tsp butter

1 onion diced

1 pinch salt

1 pinch black pepper

1tsp Goya seasoning (optional)

1 bunch green Chive & Thyme

4 seasoning peppers chopped

4oz IGA tomato ketchup

1 small tomato

¼ lb cheddar cheese grated

Bread crumbs

5 tsp Parmesan cheese

2 tsp paprika



Boil potatoes/yam in salt water. Mash with milk, butter and grated cheese to a soft consistency.

Place minced meat in Saucepan with Olive Oil and butter. Add salt, pepper, and Goya to taste stirring occasionally.

Add chopped seasoning, onion, seasoning pepper , tomatoes and tomato ketchup after 20 minutes or when the meat is cooked.

Making two even portions of Potatoes, spread one layer on to the baking dish, then layer with minced meat and then the remaining potato. Sprinkle with breadcrumbs,  Parmesan cheese and paprika.

Bake at 350 degrees for approx. 20 mins

For additional cheesiness, use a variety of cheeses which can be found in the deli section of the Supermarket.
